Sea urchins Spaghetti

Sea urchins is delicacy of South Italy
Good to eat with lemon (only eat the eggs)
or With spaghetti ( cook for 10min max in boiling water)

drain the pasta and mixed in a bowl with olive oil and a pinch of parsley, put them in  a dish
and put the eggs of the sea urchins top
 
glass of vermentino or venaccia would be perfect

 Buon appetito  enjoy your meal
